Daniel’s Sugar Shack, Westby, WI
Daniel's Sugar Shack is an impressive operation. With 1400 tapped sugar maples the sap is gravity fed into a tank within the sugar shack. Cooking the sap is a constant process during the time of year that sap is flowing. For some perspective it takes about 40 gallons of sap to produce 1 gallon of syrup. As a kid, Farmer Daniel learned the syrup making process from his father. Now in his 26th year of his own syrup production, Daniel still uses his trusted evaporator to produce some of the best tasting organic maple syrup around. If interested in purchasing Farmer Daniel's maple syrup, contact Fifth Season or Performance Foodservice and specifically ask for Fifth Season Maple Syrup.
